Stuffed Hot peppers

15 New Albany Organics hot peppers

5 cloves New Albany Organics garlic, minced

5 Tbsp. grated Parmesan cheese

1 ¼ cup fine bread crumbs

1 Tbsp. capers, chopped

2 tsp. pine nuts

½ cup extra virgin olive oil

salt and fresh ground pepper

 

Preheat oven to 350˚. Slice the hot peppers lengthwise, including the stem. Scrape out the seeds. Mix all other ingredients together making sure it is well saturated, but not swimming in oil. Stuff the peppers with the bread crumb mixture using a spoon. Pat down lightly. Place the peppers in a greased baking pan and cover with aluminum foil. Bake for 30 minutes. Remove foil and check peppers for tenderness. Bake 8 to 10 more minutes if needed.
