 Shredded Kale, Spinach, Beet Top and Radish

Garden Salad  

Ingredients for 4

 

4 Cups (1lb)Kale Washed and chopped

4 Cups (1lb)Spinach washed and chopped

4 Cups Beet Tops washed and chopped (discard/compost stems – roast or pickle beet roots for separate use )

1 cup (6oz) thinly sliced radish

Optional ¼ cup Sunflower seeds toasted

 

Dressing:

¼ cup fresh lemon or Lime juice

1 tablespoon maple syrup or Agave

1 shallot finely minced

1 clove garlic pressed or grated on micro plane

3/4 cup EV Olive Oil

Optional 1 tbl spoon Thyme leaves

1 tbl spoon hot water

1 tablespoon Dijon mustard

 

Method: Whisk together the dressing in a bowl

In another bowl combine the Spinach, Radish, kale, add sunflower seeds and toss to coat

 

              Great with grilled chicken, sliced steak or grilled shrimp skewers
