Pasta Sauce from Fresh San Marzano Roma Tomatoes

Recipe adapted from Food.com 

3 lbs. New Albany Organics San Marzano Roma tomatoes, chopped and peeled

2 New Albany Organics red onions, chopped

3 cloves garlic, chopped

3 Tbsp. chopped fresh basil

3 Tbsp. olive oil

1 tsp. salt

1 Tbsp. sugar

 

 

 

Heat olive oil over medium heat in a large iron skillet or heavy saucepan. Add onion, basil, garlic and salt. Sauté until onion is tender, approximately 5 minutes. Add tomato and sugar and heat to boil. Reduce heat and simmer uncovered for about 2 hours, stirring often or until sauce has thickened. Serve over cooked gnocchi from above recipe or over preferred pasta.
