Baba Ghanoush with Sea Salt

1 New Albany Organics eggplant

2 Tbsp. tahini

2 lemons, juiced


½ tsp. paprika

1 tsp. minced New Albany Organics garlic

sea salt

Preheat oven to 400˚ and cut eggplant into 1 inch pieces. Place eggplant onto a greased cookie sheet, sprinkle with salt, and roast in the oven for 25 minutes. Once roasted, remove eggplant and transfer to a food processor and add tahini, lemon juice, paprika, and garlic. Blend until smooth but still slightly chunky. Taste and add more salt if necessary. Serve with pita bread, crackers, or raw vegetables.
